The only one we've completed so far has been Bible Dave, and that was ages ago.

Are you applying for an artistic or game development position? If not, I suggest just listing it as one line under hobbies. Not to minimize it, but I think expounding on your hobbies too much can make you look lazy. Unless, of course, you'll be doing that kind of work for a living.

About the water, several SNES games used the system's additive blending layer to render the water. That's rendered as background, blending, foreground.

Here's an example from Secret of Mana.

To really get the SNES appeal, make sure you try and stick to the limitations of the system. The color palette is 15-bit, that means you only get 0 to 31 in your RGBs instead of 0-255.
